Blessed with a pristine natural environment, Hokkaido is a treasure trove of high-quality produce.
We create our distinctive Okonomiyaki using the bounty of this vast and fertile land.
The care we take in the selection of our ingredients has helped maintain our popularity among young and old for more than 50 years.

Hokkaido

Flour

Flour is the most essential element in the creation of our Okonomiyaki and ours is sourced exclusively from 100% Hokkaido produce. The batter for our Okonomiyaki is specially prepared in the kitchen of every restaurant each morning. Experienced chefs take care in its preparation to produce the perfect soft body and texture.

From Shiraoi,
Hokkaido

Eggs

We use eggs produced by healthy chickens in Shiraoi, Hokkaido. Quality is assured through a strict production-management system.

From Chitose, Hokkaido

Cabbage

We use cabbage produced by our contract farmer, ‘Keiai Farm’ in Chitose, Hokkaido.
The sweetness and tenderness of cabbage varies throughout the year, depending on the varieties grown each season. Examples include ‘Winter cabbage’ cultivated in the winter and ‘Green ball cabbage’ in the spring. The resulting seasonal variation adds a uniqueness and special quality to this essential ingredient.

Chinese yams

Hokkaido-grown Chinese yams are renowned for being richly sweet and sticky. Thorough blending of yam into our batter produces a light and delicate texture.

Dried bonito / Dried green seaweed

Dried bonito and dried green seaweed are indispensable seasonings for true Okonomiyaki. We use specially selected varieties produced exclusively in Japan. These seasonings bring about an enriched flavor that stimulates the appetite.

Noodles

Our noodles are plump and satisfyingly firm and come to life mixed with our original sauce. So popular are our stir-fried noodles that, ever since Fugetsu's establishment, some customers have considered them our restaurant's main fare.

Original Sauce

Our original Okonomiyaki and stir-fried noodle sauces have been developed in cooperation with Kikkoman Corporation. Our sauces’ perfect balance of flavor and spiciness is the secret to making our customers come back for more.

Original Mayonnaise

Our exclusive-recipe mayonnaise was created with the assistance of Ajinomoto Co., Inc. It perfectly complements our Okonomiyaki sauce, adding an extra degree of flavor.
